Here is another Infused Water Combination i am trying. I wanted to try a Berry Infusion, but I didn't have any fresh berries on hand. Then I remembered I had a bag of frozen berries that I use for my breakfast smoothies. Genius!! Berry Medley Infused Water

I couldn't sleep at all last night. After finally giving up, I made myself some coffee. And then I got very bored. Didn't feel like crocheting, couldn't watch tv since Lil Man was sleeping in my recliner in the tv room. I did consider playing a couple games on FB, but that didn't appeal either. So what else was there for me to do?! I decided to make a real breakfast. Not the usual PopTart or Fruit Smoothie. Then I remembered a "recipe" I had pinned yesterday to Pinterest: "Surprise Inside Breakfast Muffins". The original link can be found here: Pancake Muffins Here are my versions (definitely more detailed than the original link provided). I decided to make 4 different kinds. And since there are 3 of us here, I would make 3 of each. Which of course adds up to a dozen. Which of course happens to be how many muffins the muffin tin holds. I'm brilliant, I know. hahaha! Just kidding. Anyway, Let's get started. (BTW you can use whatever filling you want) **4/23 Updates added in TEAL in italics** Ingredients: *Pancake Mix (I used Aunt Jemimah and just followed the instructions for a full batch of pancakes ) *Sausage -I used the little Frozen pre-cooked Jimmy Dean Sausage Patties. I thawed them out and cut into chunks. I also added a small pinch of shredded cheese *Ham & Cheese- I chopped some leftover Easter Ham in to small cubes (about 1 Tbsp of ham per muffin). I also put a large "pinch" of shredded Sharp Cheddar. You can use whatever cheese you prefer. * Blueberries- I had a bag of frozen blueberries. I put them in a bowl to thaw and sprinkled with sugar. I decided to do a little over 1 Tbsp of blueberries for each muffin **4/23-A fellow Kitchen Adventurer recommended leaving the fruit/berries frozen. I think I have to agree with her. ** * I also had a bag of Frozen Multi Berries mix. It was Raspberries, Blackberries, Blueberries & Strawberries. I put those in a bowl to thaw (cutting up the bigger chunks) and sprinkled with sugar. Again, I used a little over 1 Tbsp of berries for each muffin. **4/23-A fellow Kitchen Adventurer recommended leaving the fruit/berries frozen. I think I have to agree with her. ** I decided to set up the "savory"/meat muffins first. I will explain why in a bit. Preparation: Meat Muffins: 1) Fill your muffin tin 1/4 full with pancake batter 2) Add your fillings **4/23-I would also add a bit of salt & pepper to taste** 3) Pour more batter in until abt 3/4 full. I admit, I may have put in a little more than that to make sure all the fillings were covered. Now I was ready to work on my Berry Muffins: 1) I added a splash of vanilla to the batter to give it a sweeter flavor. 2) Fill your muffin tin 1/4 full with pancake batter 3) Add your fillings 4) Pour more batter in until abt 3/4 full. I admit, I may have put in a little more than that to make sure all the fillings were covered. Baking:
1) Preheat oven to 350degrees 2) Bake for approx 12-14 minutes. 3) I carefully removed the Meat Muffins since they were done. 4) I put the Berry Muffins back in for abt 3-4 more minutes. 5) Remove from oven & cool. |
