A couple years ago when my mom was up here for a visit, I asked her to make it for us. I really wanted Hubby to experience this awesomeness. As we watched her make it, I kept thinking to myself, "WOW! This is really simple! Even I could make it successfully...probably." And yes, Hubby really liked it too.
We have made it many times since. It has become a family favorite. Even Lil Man likes it.
Well, it has been a while since we made it last. So that is what I am going to make for "Linner" (lunch/dinner) tomorrow. I thought I would be nice & share the recipe ahead of time. Just in case you want to try this awesomeness & need to go shopping ! I will add pics tomorrow as well.
**Update: I usually like to take pics of item before goes in the oven & right out of oven. However, I didn't get much sleep last night. So Hubby said he would do the assembly & put in oven for lunch while I took a nap. He was very happy all the components were prepped last night though. Unfortunately, he forgot to take pics of assembly, etc. **
Ingredients
1 bag of Restaurant Style Tortilla Chips- we use these
2 cans Cream of Chicken Soup
1/2-1 med onion - we like onions so we use a whole one
2 cans Mild Green Chilis
3 cups grated longhorn or Mexican Style cheese- we use a bag of shredded Mexican Blend Cheeses
4-5 Chicken Breasts
1 1/2 -2 soup cans full of milk -we use 1.5 cans cuz we like it a little thicker
* Sour Cream & Salsa (optional)- we like to top our individual servings with a dollop of sour cream & salsa
Directions
1. Boil chicken for 45 min or fried slowly with small amount of oil and garlic salt or minced garlic. (a. we also use a little Worcestershire Sauce and celery salt and b. I cut into large chunks to cook more quickly)
2. Cut into bite-sized pieces
3. Chop onion into small pieces
4. Mix together soup, milk, chilies and onion
** I do steps usually 1-4 the night before
5. Spray 13x9 or bigger pan with Pam
6. Layer: 1/3 of chips, 1/2 chicken, 1/3 cheese
7. Pour 1/2 of soup mixture over top
8. Add another layer of chips, chicken and cheese
9. Pour remainder of soup on top.
10. Add last layer of chips & then cover with rest of cheese
11. Cover in foil and bake at 400 degrees for 30 min.
12. Uncover & bake until golden brown & bubbly (watch carefully while uncovered, it browns the top quickly)
