Here are my modifications:
1. I doubled the recipe so I could make 12 big meatballs & 16 little meatballs.
2. I minced raw spinach & carrots to add to meat mixture (sneaky way to add veggies to a meal)
3. I also added a little bit of red pepper flakes to the meat.
4. Little Meatballs-I used Alfredo Sauce from a jar and added minced garlic
Big Meatballs- I used a can of Pasta Sauce with mushrooms and I added onions, minced garlic and Italian Seasonings
Changes I will make in the future:
1. I think I will brown the meatballs a bit in the skillet, before covering in sauce to bake. I tried a little meatball after they cooled a little. It looked/felt a little "soggy". It still tasted good though :)
2. I will probably add more spinach & carrots. I was a bit conservative this round since I hadn't made these before.
3. I would use ground beef with less fat content. When I took the little meatballs out of the oven, there were a couple pools of grease. So I just scooped the grease out as best I could.
4. I would add more sauce after done cooking
**4/18: This recipe was pretty tasty & easy to make. I would give this a 3.75 Stars. I think when I make it again and implement the changes I mentioned above, it could very well be a 5/5 STARS :)
